HOW TO MAKE THE PERFECT PARSI PORO RECIPE

The Parsi Poro is a very cherished breakfast (or anytime) dish in Parsi cuisine. It’s a savory egg omlette dish known for its bold flavors and use of fresh herbs and spices which makes it very delicious and fulfilling dish. “Poro” is the Gujarati word for omlette, and in the Parsi context, it refers to a spiced, savory egg preparation that reflects both Persian roots and Indian influences.
The Poro is a staple breakfast dish in many Parsi homes, often paired with pav (bread rolls) or toast and a hot cup of chai (tea). It’s quite common for Parsis to enjoy poro at any time of day — breakfast, lunch, or even dinner — making it a go-to comfort food.
HOW TO MAKE PERFECT PARSI PORO – STEP BY STEP RECIPE
- First of all, we have to finely chop Onion, Garlic, Ginger, Green Chillies and some Coriander Leaves. To do so, I am using a chopper here which will do it perfectly and quickly. You may do the chopping with knife if you have great vegetable cutting skills. Take these ingredients as per your wish, the quantity taken here are mentioned on the images.





2. Break 2 eggs in a bowl. Add salt and red chilli powder as per taste and 1/4th tsp of turmeric powder. Add the finely chopped onion, ginger, garlic, green chillies and coriander leaves prepared in Step 1. You may also add finely chopped tomatoes but its completely optional. I do not prefer adding Tomato in egg dishes hence skipping it. Next, whisk the eggs with a help of fork or hand-held whisker till the egg mix turns lighter and fluffy. This step is very important for the Omlette to become soft and fluffy.







3. Traditionally, poro is fried in ghee but we are using oil here. Trust me, frying the omlette in ghee elevates the taste to a different level altogether. Once the oil is hot, pour the egg mixture and spread it evenly on the pan. Cover with a lid and cook the omlette on low heat till the top surface of the omlette becomes firm.





4. Now, flip the omlette and fry on the other side for a minute. Repeat this step for 2 times till both sides of the omlette gets a nice golden brown color. Voila, super delicious and spicy Parsi style omlette or poro is ready. Enjoy with pav or toast and a hot cup of chai.
