BOMBAY VEG GRILLED SANDWICH RECIPE | EASY MUMBAI STREET-STYLE SNACK

Bombay Veg Grilled Sandwich is a popular Mumbai street food made with slices of bread layered with boiled potatoes, cucumber, tomato, onion, capsicum, beetroot, and a spicy mint-coriander chutney. The sandwich is generously buttered and grilled until golden and crisp. Street vendors often sprinkle a special sandwich masala between the layers and serve it with extra green chutney and tomato ketchup, giving it its signature tangy and spicy flavor.

Whether you’re looking for a quick breakfast, an evening tea-time snack, or a light meal, this Mumbai-style grilled sandwich is a perfect choice. It’s easy to make at home, highly customizable, and can be prepared with or without cheese depending on your preference. Grilling the sandwich gives it a perfectly crisp exterior while keeping the vegetables soft and flavorful inside.

In this recipe, I’ll show you how to make an authentic Bombay Veg Grilled Sandwich step by step. Once you try this homemade version, you’ll see why this timeless Mumbai favorite is loved by people of all ages.

HOW TO MAKE BOMBAY VEG GRILLED SANDWICH – STEP BY STEP RECIPE

  • Choice of Bread

Traditionally, Bombay Veg Grilled Sandwich is made with soft white sandwich bread, which gives it the classic Mumbai street-style taste and texture. That said, you can easily customize this recipe by using whole wheat bread, multigrain bread, or sourdough bread for a healthier or more rustic variation.

For this recipe, I’ve used sourdough white sandwich bread, which offers a light tangy flavor, a soft interior, and a crisp golden crust after grilling, making it a delicious alternative to traditional white bread.

  • Butter the Bread

Spread a generous layer of softened butter on one side of each bread slice. Butter adds richness and also prevents the chutney from soaking into the bread.

  • Spread the Green Chutney

Spread an even layer of the sandwich green chutney over the buttered side of the bread slices. You can easily prepare the chutney at home using fresh coriander and mint leaves and spices. Here’s my homemade Green Chutney Recipe that works perfectly for sandwiches. If you’re short on time, you can also use ready-made sandwich green chutney available in the market from trusted brands.

  • Layer the Vegetables

On one bread slice, arrange the vegetables in this order:

  • Potato slices
  • Capsicum slices
  • Cucumber slices
  • Tomato slices
  • Onion slices
  • Beetroot slices (optional)

Sprinkle sandwich masala, a pinch of chaat masala, and a little black salt over the vegetables for that signature Mumbai street-food flavor.

Optional: Add a layer of grated cheese or a cheese slice if you prefer a cheesy sandwich.

  • Grill the Sandwich

Place the second bread slice on top with the chutney side facing down. Gently press the sandwich to keep the filling in place.

Lightly butter the outside of the bread slices and place the sandwich in the grill. Cook for 4–6 minutes, or until the bread is golden brown, crisp, and beautifully toasted.

No sandwich maker? Cook the sandwich on a buttered grill pan or tawa over medium heat, pressing gently with a spatula and flipping halfway through until both sides are crisp and golden.

  • Slice and Serve

Carefully remove the sandwich from the grill and let it rest for a minute. Cut it into halves or quarters.

Serve hot with Tomato Ketchup.
