RATH YATRA SPECIAL TANKA TORANI RECIPE | ODISHA’S FAMOUS SUMMER DRINK

Tanka Torani is a traditional Odia summer drink that has been enjoyed for centuries for its cooling, refreshing, and digestive benefits. Made with fermented rice water, curd, and a blend of aromatic herbs and spices, this probiotic beverage is deeply rooted in Odisha’s culinary and cultural heritage.

The drink holds a special place during the auspicious Rath Yatra festival in Puri, where thousands of devotees gather to witness the grand procession of Lord Jagannath. To help pilgrims stay refreshed and hydrated in the summer heat, Tanka Torani is prepared and distributed in large quantities. In the Jagannath Puri Temple, this sacred drink is traditionally made using Mahaprasad anna (cooked rice) that has been offered to Lord Jagannath. The fermented rice water is combined with curd, grated ginger, green chilies, roasted cumin powder, curry leaves, lemon leaves, lemon slices, and salt, resulting in a flavorful and nourishing beverage.

RATH YATRA SPECIAL TANKA TORANI DRINK – STEP BY STEP RECIPE

  1. Ferment Rice Water
  • Place 1 cup of cooked rice in an earthenware pot or a large bowl.
  • Gently mash the rice using the back of a ladle or your hands.
  • Pour in about 1 liter of water and mix well.
  • Cover the pot and allow the rice to soak and ferment for 10–12 hours or overnight at room temperature.
  • Once fermented, strain the liquid or remove the rice, reserving the fermented rice water for preparing the Tanka Torani.

2. Add the Herbs and Spices

  • To the fermented rice water, add the below ingredients :
    • Few Curry Leaves
    • 1 tablespoon grated Ginger
    • 2-3 Green Chillies, slit length-wise
    • 3-4 Lemon leaves
    • Salt to taste
    • 1 teaspoon of Black Salt
    • 1 teaspoon of roasted Cumin Powder
    • Few Lemon Slices
    • 200 grams of Curd (Yoghurt)

3. Mix n Make Tanka Torani
