HOW TO MAKE MAHARASHTRIAN MASALE BHAT


Maharashtrian Masale Bhat is traditional spicy rice dish prepared in all special occasions and festivals. It made with a special Maharashtrian spice blend called Goda Masala and vegetables like carrot, bean, cauliflower, ivy gourds (tendli or kundru), brinjal, green peas and garnished with grated coconut and fresh coriander leaves. It is usually served with raita, koshimbir (Maharashtrian style salad) and fried papad.

MAHARASHTRIAN MASALE BHAT – STEP BY STEP RECIPE

  1. Take 1 cup of basmati rice in a bowl. Wash the rice with water and then discard the water. Repeat this process for 2 to 3 times till you get clear water. Soak the washed rice in water for 30 minutes.

2. Heat 1 tablespoon each of Groundnut Oil and Ghee (clarified butter) in a cooking pan. When the oil-ghee mix is hot, add the below mentioned spices one by one :

  • 1/2 teaspoon of Cumin seeds
  • 1/2 teaspoon of Mustard seeds
  • 1/4th teaspoon of Asafoetida(Hing)
  • 1 medium size Onion, thinly sliced

Fry the onion for a minute or two till the raw smell of onion is gone.

3. Next, add the below mentioned ingredients one by one :

  • 10 to 12 Curry Leaves
  • 2 tablespoon of Peanuts
  • 1 teaspoon of Ginger Garlic paste

Fry the peanuts for few minutes before adding the ginger garlic paste. Fry the ginger garlic paste for few minutes so that the raw smell of ginger and garlic are gone.

4. Next, let’s add the vegetables one by one :

  • 1/4th cup of sliced Carrot
  • 1/2 cup of Beans cut into 1 inch stick
  • 1/2 cup of Cauliflower florets
  • 1/2 cup of Ivy Gourds (Tendli or Kundru), cut into quarters vertically
  • 1/2 cup of Potato cubes

Fry all these vegetables together with the onion and the spices till the raw smell of vegetables are gone.

5. After the vegetables are lightly sauteed, add 1 tomato roughly chopped and fry with the vegetables for two to three minutes.

6. Next, we have to add the dry spice powders as mentioned below :

  • Salt as per taste
  • 1/2 teaspoon of Turmeric Powder(Haldi)
  • 1 teaspoon of Dry Red Chilli Powder
  • 1 tablespoon of Goda Masala, a special Maharashtrian spice mix available in all super markets or online stores
  • 2 teaspoon of Coriander Powder
  • 2 teaspoon of Garam Masala Powder

Fry the vegetables for few minutes with the dry spice powders.

7. Add the rice without the water and fry the rice with the vegetables for 1 to 2 minutes. Then, add 1.5 cups of water. Generally, water is added double the quantity of the rice. But, here we are adding vegetables which will release water hence adding 1.5 cups of water.

Add two slit green chillies and cover with a lid. Simmer the rice for 15 minutes on low flame.

8. Open the lid after 15 minutes and garnish with a handful of chopped coriander leaves and grated coconut. Masale Bhat is ready, keep it covered for 5 minutes before serving. Enjoy the authentic Maharashtrian Masale Bhat with fried papad and raita.
