Amba Checha is a very popular Odia recipe during summers. Amba Checha is Odia Raw Mango Chutney traditionally prepared by crushing raw mango into a coarse paste using a mortar and pestle. Crushed raw mango paste is then mixed with few basic spices makes it very tangy and delicious chutney. It is eaten as an accompaniment to a rice meal or Pakhala Bhat in summer.
It is also called Kancha Amba Checha as it is prepared with raw mangoes.
Note : In Odia language, Amba means Mango and Checha means crushed into coarse paste. Kancha Amba means Raw Mango.
AMBA CHECHA – ODIA RAW MANGO CHUTNEY (STEP BY STEP RECIPE)
- Take 1 medium size raw mango, peel off the skin and chop it roughly. One raw mango is sufficient to make chutney for 3 to 4 person.
2. Here, I am making the Amba Checha (Raw Mango Chutney) in the traditional way using a mortar and pestle. To prepare the chutney quickly, you may use a grinder to make the paste of the raw mango. However, the taste of the chutney is at an elevated level when prepared in the traditional process.
Crush 4 cloves of Garlic and 1 Green Chilli using the mortar and pestle into a coarse paste. Then add 2 to 3 stalks of Coriander and crush together with Garlic and Green Chilli into a coarse paste.
3. Add the raw Mango slices in batches and crush into a coarse paste as shown. This would take around 10 to 15 minutes but you can do this very quickly in a grinder.
4. Next, add Salt as per taste, 1 tsp of Black Salt and 1/2 tsp of Mustard paste. Just to reduce the sourness of the chutney, you may add 1 tsp of Sugar but its completely optional.
Next, drizzle some Mustard Oil and mix everything very nicely. Mouth-watering spicy and tangy authentic Odia Amba Checha or Raw Mango Chutney is ready. Enjoy with Dal Chawal or as a side dish to Pakhala thali.
