Puri Jagannath Mahaprasad Magaja Ladoo is the recipe of one of the chappan bhog (56 Bhog) offered daily to Lord Jagannath in the Puri Temple, Odisha. Magaja Ladoo is also called Atta Laddu which is made of whole wheat flour fried in ghee and flavored with a unique spice powders and desi Khand (sugar powder). Daily 56 bhog are first offered to Lord Jagannath and reoffered to Maa Bimala then it turns into Mahaprasad.
PURI JAGANNATH MAHAPRASAD MAGAJA LADOO (STEP BY STEP RECIPE)
- Take 3 cups of Whole Wheat Flour (Atta) and 1 cup of Ghee. The ratio of flour to ghee is 3:1. For this quantity of Atta or Whole Wheat Flour, 3/4th cup of powdered Sugar or Khand required.
2. To make the special spice powder for the Magaja Ladoo, we will require the below spices :
- 1 tbsp of Black Peppercorns
- 6 Green Cardamom
- 5 to 6 Cloves (Laung)
Crush the Black Peppercorns into a coarse powder. Take out the seeds of the Cardamoms and crush the seeds of the cardamom and cloves into a coarse powder.
3. Heat the ghee in a cooking pan or kadai. Once the Ghee is hot, add the whole Wheat Flour. Mix the flour or atta thoroughly with the ghee and keep frying on low flame. Keep frying the flour for 10 to 15 minutes till the raw smell of Atta is completely gone.
4. Whole Wheat Flour or Atta is nicely fried now. Add the prepared Black Pepper Powder and Cardamom+ Cloves Powder. Mix the spice powders nicely with the flour and keep frying for another 5 minutes. Keep the gas flame at low and keep stirring intermittently so that the flour does not stick to the bottom of the kadai.
Next, add the Sugar powder or Khand and mix well with the flour. Switch off the gas. Ladoo mix is ready.
Take it out on a plate and allow it to cool down a little. If the ladoo mix becomes completely cool then it will not be possible to make the laddus.
5. Rub a little amount of Ghee on the fingers. Take a portion of the ladoo mix and roll it into a small ball.
Magaja Ladoo is ready. Place few Tulsi leaves on the Laddus and offer to the Lord Jagannath as bhog.
