Lemon Rice is a very popular South Indian Recipe. Lemon Rice has a very refreshing citrus flavor of lemon juice and nutty aroma of tempered lentils and fried peanuts. Lemon Rice is a easy recipe for lunch or is an excellent option for kids tiffin box or as a compact lunch for adults. Very quick to make, doesn’t take even 10 mins if you have some cooked rice in the fridge. If you are beginner in cooking then you can easily impress everyone with this easy Lemon Rice Recipe. So, let’s start!!!

HOW TO MAKE LEMON RICE – STEP BY STEP RECIPE

  1. Heat 2 tbsp of Sesame Oil in a cooking pan. You may use When the oil is smoking hot, add the below :
    • 1/2 tsp of Mustard Seeds
    • 3 to 4 Dry Red Chillies

Fry for few seconds till the Red Chillies turn light brown in color.

2. Next, add the lentils as mentioned below and fry till the lentils turn light brown in color

3. Now, add Asafoetida or Hing and Curry Leaves and fry for few seconds more.

4. Add half teaspoon of finely chopped Ginger, 2 or 3 slit Green Chillies and fry for few seconds till the raw smell of Ginger is gone. Then add 1/2 tsp of Turmeric Powder and Salt as per taste.

5. Add 2 cups of cooked Rice. For making Lemon Rice, we generally use Raw Rice like Sona masoori Rice, Ambemohar Rice, Ponni Rice etc. but not Basmati Rice.

After adding the rice, gently give a mix so that the turmeric doesn’t get burnt.

Next, add freshly squeezed juice of 3 Lemons, half a tsp of Sugar to balance the flavors and 1/4th cup of fried Peanuts. Instead of fried Peanuts, you may opt for roasted Peanuts which a healthier alternative.

Mix all these ingredients with the rice very gently. Garnish with a handful of chopped Coriander leaves but this is completely option.
