HOW TO MAKE KANDA BATATA POHA (STEP BY STEP RECIPE)
- Take 2 cups of medium thick Poha or flattened rice in a bowl. Add sufficient water and wash the poha for one to two minutes till it releases the starch and becomes soft. Drain the water and keep the washed and softened poha aside.
2. Heat 3 tsp of sunflower oil or any other non aromatic oil in a cooking pan. When the oil is hot, fry one-fourth cup of Peanuts. Take out the fried peanuts in a separate bowl.
3. In the remaining oil, fry 1/2 tsp of cumin seeds (jeera). When the cumin seeds starts to splutter, add 1 tsp each of finely chopped ginger and green chillies and few curry leaves. Fry the spices for the few seconds. Roughly chop one medium sized Onion and fry it with the spices till it turns translucent.
4. Add one large size Potato cut into small cubes. Add salt as per taste and 1/2 tsp of turmeric powder, fry onion and potato for 2 minutes. Next, add half cup of green peas and fry with the potato and onion. Here, I have used frozen green peas, it will release water and get cooked. So, cover the vegetables with a lid and cook for 5 minutes on medium flame.
5. Next add the fried peanuts and few raisins. Adding raisins is completely optional. Generally, little bit of sugar is added to balance the flavors. To avoid the sugar, I am adding the raisins here. But you may skip both. Add the poha and mix with the vegetables. Finally, add 1 tsp of lemon juice and a handful of chopped coriander leaves. Mix everything together.
Super delicious Maharashtrian breakfast “Kanda Batata Poha” is ready!!
