Winter is the perfect time to enjoy hearty and healthy vegetable dishes, and nothing beats the aroma of Methi Gajar Matar ki Sabzi simmering in your kitchen. This classic North Indian winter recipe combines fresh methi (fenugreek leaves), sweet carrots, and green peas into a flavorful, nutritious sabzi that pairs perfectly with roti, paratha, or steamed rice. HOW TO MAKE METHI GAJAR MATAR KI SABZI – STEP BY STEP RECIPE

The authentic way to cook this North Indian style Methi Gajar Matar ki sabzi is to cook it in a cast iron cookware. So, let’s get started…

  1. Heat one and half tablespoon of oil in a cast iron kadai. Once the oil is hot, add the tempering :
    • 1 teaspoon of Cumin Seeds
    • 1/2 teaspoon of Mustard Seeds
    • 1/4th teaspoon of Asafoetida (Hing)

Fry the spices for few seconds till the cumin seeds and mustard seeds starts to splutter.

2. Next, add 1 tablespoon of Ginger, Garlic and Green Chilly paste. Fry till the raw smell of ginger and garlic are gone. Next, add one medium size Onion chopped finely and fry the onions till it turns translucent.

3. Next, add salt as per taste and finely chopped tomatoes followed by the spices mentioned below :

Fry the spices together till oil starts coming out.

4. Next, add the vegetables one by one :

Potatoes are completely optional here but I personally feel potatoes enhance the taste of this curry. Fry the vegetables with the masala for few minutes. Cover with a lid and the vegetables will release water and get cooked in its own juices.

5. When the vegetables are 80% cooked, add the chopped Methi leaves. Sprinkle some salt on the leaves and cover with a lid. The methi leaves will release water and reduce in volume. Open the lid after five minutes and the gently stir the methi leaves with the vegetables. Cover the vegetable with a lid and cook for sometime till all the vegetables are completely cooked.

6. Once the vegetables are completely cooked, check the salt and add if required. Finally, add :

Nicely mix everything and super tasty and healthy Methi Gajar Matar ki sabzi is ready. Enjoy with hot wheat roti or millet roti in the winters.
